Utilization of Samh Flour as Baking Ingredient


Studying the opportunity of utilization of Samh flour (Mesembryanthemum froskalii Hochst) as a baking ingredient in rural areas in Jordan.

It is a wild plant that is grown wildly in spring to summer in the south-eastern part of Jordan.

Seeds of Al-Samh are documented and cultivated in several Arabian Countries like: Egypt, Jordan, Palestine, Bahrain and Qatar but they are more common in the northen part of Saudi Arabia. Known since the time of the Arabs, it is an annual plant that flowers after the rainy season and matures five months after flowering. These annual seeds, renowned for their nutritional value, have been utilized for generations.​
